Class I

Reasonable probability that use of or exposure to the product will cause serious adverse health consequences or death. Examples include undeclared allergens, Listeria contamination, and Salmonella in ready-to-eat products.

Class II

Temporary or Reversible

Use of or exposure to the product may cause temporary or medically reversible adverse health consequences, or where the probability of serious consequences is remote. Temperature abuse during shipping is a common trigger.

Class III

Low Health Risk

Use of or exposure to the product is not likely to cause adverse health consequences. Often involves labeling issues, minor quality problems, or regulatory non-compliance that does not directly affect safety.
