Coho Salmon
Oncorhynchus kisutch
The diplomatic salmon — mild, balanced, bright orange, medium-firm flesh. The safe pick if you don't know who you're feeding, and the right pick if you want a fish that takes a sauce well without disappearing under it.
Coho is excellent for weeknight cooking. Shorter cook times than sockeye, milder flavor than king. Great for sheet-pan meals, glazes, and quick pan-sears.
Trolled in Sitka and seine-caught around Kodiak from mid-July through September.
